Chicken Riggies is a popular dish here in the Mohawk Valley.
Like salt potatoes, it may not be known to you who do not live around here.
This week I took a riggies class with the chef from the restaurant that won the Mohawk Valley Riggiefest competition for three years running (they are now retired to the Riggies Hall of Fame so that someone else can win).
The riggies were great, and I want to know if you think I should try to make it (them?) at Pennsic for my camp.
Chicken riggies starts with sauteed peppers, onions, mushrooms & garlic. Add chunks of cooked chicken & some black olives, deglaze with chicken stock, add hot cherry peppers to taste, cook down, deglaze with white wine. Add marinara sauce, alfredo sauce, and grated parmesan; heat. Add rigatoni pasta that has been cooked al dente, heat. Serve.
There are also vodka riggies, made with a vodka cream sauce instead of alfredo sauce. There are steak riggies, sausage riggies, and shrimp riggies.
Should I try making the chicken riggies for camp at Pennsic? I could serve it with italian bread & a green salad. What do you think?
